Well, It's a beautiful day here in North Mississippi. I am so glad, and I am so glad that the Presidential debate in Oxford is still on for tonight.. I was in Oxford a few weeks ago for a meeting, and they were steadily getting everything ready. the campus was buzzing with excitement. Our meeting was a t the Chamber Of Commerce, and they said they were so ready.. So... it's a sigh of relief right now in Oxford.. Please pray for our candidates. This is one important night.. and pray for our nation too.. I'm sure you're ahead of me on that... Bunches of hugs!

Chocolate Peanut Butter layer Brownies /Favorite Ingredients Friday!

2 ounces unsweetened chocolate, chopped up

1 stick (1/2 cup) butter, softened

1 1/4 cups sugar

3 large eggs

1 teaspoon Watkins vanilla

2/3 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup chunky peanut butter

1/2 cup semisweet chocolate chips


Preheat oven to 350 degrees and butter and flour a 9-inch square baking pan, knocking out excess flour. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate, stirring, until smooth and remove top of double boiler or bowl from heat. Cool chocolate to room temperature.
In a large bowl with an electric mixer beat butter and sugar until light and fluffy and beat in eggs, 1 at a time, beating well after each addition, and vanilla. Into a small bowl sift together flour, baking powder, and salt and beat into butter mixture just until blended well. Divide batter between 2 bowls. Whisk peanut butter into batter in 1 bowl. Whisk melted chocolate into batter in other bowl and stir in chopped chocolate or chocolate chips.
Spread peanut-butter batter evenly in pan. Drop chocolate batter by large spoonfuls onto peanut-butter batter and spread carefully to form an even layer. Bake brownies in middle of oven 35 to 40 minutes.


Cool in pan before cutting into 16 squares.

Brownies keep, layered between sheets of waxed paper in an airtight container at cool room temperature, 5 days.

Favorite Ingredients Friday!

Fruit Pizza


INGREDIENTS

1 roll (16.5 oz) refrigerated sugar cookies

1 package (8 oz) cream cheese, softened

1/3 cup sugar

1/2 teaspoon Watkins Vanilla

1 cup fresh or canned peach slices, drained, cut into thinner slices

1 cup halved or quartered fresh strawberries

1 cup fresh or frozen blueberries

1/2 cup apple jelly


DIRECTIONS

1. Heat oven to 350°F. Grease 12-inch pizza pan or spray with cooking spray. In pan, break up cookie dough; press dough evenly in bottom of pan to form crust.

2. Bake 16 to 20 minutes or until golden brown. Cool completely, about 30 minutes.

3. In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust. Arrange fruit over cream cheese.

4. Stir jelly until smooth; spoon or brush over fruit.


Refrigerate until chilled, at least 1 hour.

Cut into wedges or squares. Store in refrigerator.

I have a Family Reunion this weekend , so I'm going to make this as one of the dishes. We have squash a plenty..lol



Summer Squash Casserole


Ingredients:

3 cups sliced yellow squash

1 onion, chopped

1/4 cup sliced green onion

1 cup water

1 teaspoon salt, divided

2 cups crushed buttery round crackers

1/2 cup melted butter

1 (10.75 ounce) can condensed cream of mushroom soup

1 large carrot, shredded

1/2 cup mayonnaise

1/2 (4 ounce) jar diced pimento peppers, drained

1 teaspoon sage

1/2 teaspoon pepper

1 cup shredded sharp Cheddar cheese


Directions :


Preheat oven to 350 degrees F .
In a large saucepan combine yellow squash, onion, green onion, water and 1/2 teaspoon salt.

Cover and cook over medium heat about 6 minutes.

Drain well and set aside.
In a medium bowl combine cracker crumbs and butter.

Mix well and spread half of the mixture into the bottom of a 9x13 inch casserole dish.
In a large bowl combine soup, carrots, mayonnaise, pimentos, sage, pepper and remaining 1/2 teaspoon salt. Fold in squash mixture and spoon over crumb crust. Sprinkle cheese on top, and then the remaining cracker crumbs.
Bake in preheated oven for 20 to 30 minutes, or until firm and heated through.

Favorite Ingredients Friday









Hamburger Steak with Gravy



Ingredients:
2 1/2 pounds lean ground beef
1/4 cup chopped celery
1/2 teaspoon Watkins garlic salt
1 tsp. Watkins black pepper
1/2 cup finely chopped onion
1/4 cup finely chopped green pepper
2 eggs
Dash of Worcestershire sauce
Flour or meal
2 cans cream of mushroom soup


chopped mushrooms(optional)
Directions:



Preheat oven 350°. Mix beef, pepper, celery, green pepper, onion, garlic salt, eggs, and Worcestershire sauce. Form into patties; roll in flour or meal. Place hamburger steaks in 9x13x2-inch baking dish and pour mushroom soup over the steaks.Sprinkle the chopped mushrooms over the top. Bake about 1 hour, until thoroughly cooked. Makes 6 to 8 servings.

Low Fat Rocky Road Brownies


4 egg whites whipped
1/2 cup sugar
1 tablespoon vanilla
1/2 cup cocoa powder, sifted
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup flour
1 cup marshmallow creme

Preheat oven at 325ยบ. Prepare a 9 x 13" pan with cooking spray and flour. In a mixing bowl, combine baking powder, cocoa/carob powder, salt, and flour. In another mixing bowl, combine egg whites, sugar, vanilla, and marshmallow creme. Mix dry ingredients with wet ingredients. Bake for 18 minutes.
Makes 8 servings

2 points per serving
