Slow Cooking Thursday

Okay, Get that crockpot ready for the weekend!

Savory Beef Roast


INGREDIENTS
2 pounds boneless beef roast
1 teaspoon vegetable oil
salt and pepper to taste
1 onion, quartered
16 baby carrots
1 (10.75 ounce) can condensed cream of mushroom soup
4 cloves garlic, minced
2 tablespoons chopped fresh parsley

DIRECTIONS
In a large skillet over medium high heat, saute the roast in the oil for 15 minutes, or until all sides are well browned. Season with salt and pepper to taste and set aside.
Place the onion, carrots, garlic and parsley in the bottom of a slow cooker. Place the roast on top of the vegetables and pour the soup over the roast and the vegetables.
Cover the slow cooker and cook on low setting for 8 to 10 hours, stirring once.
Transfer roast to a serving platter and place the vegetables around it. Pour the roast gravy from the slow cooker into a gravy boat.

How is the job search for your hubby going?

Good Morning Stephanie,
Oh my, your Roast sounds yummy. "THANK YOU" for sharing the recipe with us. I've never done a roast that way before, so I may have to give it a try next time I make a roast. We FINALLY got our BIG SNOW yesterday and last night. It started Snowing around 11:30a.m. and they let School out at 12:15p.m. My DH made it home from Memphis around 3:30p.m. and him and the girls tried making a Snowman, but the Snow was too wet. Maybe they will be able to make a Snowman today. I don't think we will be able to move today as we have so much Snow. I'm guessing we have around 5 or 6 inches of Snow. I'll just have to see what my DH wants to do when he wakes up. I'm having my morning coffee now. If we don't move, I am planning on taking some pictures of the Snow and showing them tomorrow. I was going to do that yesterday afternoon, but I had to charge the batteries up on them first. I'm thinking of maybe making some Homemade Soup today. Since it is cold and we have Snow, Homemade Soup would be good on a day like this. It all just depends on if we move or not. Take care my friend and have a great day. May God Bless You and Yours.

The crockpot is so handy.. I just love it. I put the stuff in the crockpot in the morning, and when I get home from work, the house smells wonderful and it's suppertime in minutes..lol
