Cran-Raspberry Cake


this is part of Favorite Ingredients Friday!

Ingredients
1 box light pound cake mix
1-1/2 tsp Watkins Butter Extract
1-1/2 tsp Watkins Double Strength Vanilla
1 pie filling recipe Watkins Vanilla Dessert Mix


1 cup cranberry or cran-raspberry juice cocktail
2 cups fresh raspberries or 2 packages (10 to 12 oz) frozen raspberries, thawed
2 tbsp sugar
8 oz reduced-fat whipped topping
Fresh raspberries for garnish, if available

Directions

Prepare pound cake mix per package directions, adding extracts to the batter. Bake per instructions and cool completely. Prepare vanilla pie filling per package directions and let cool. Cut pound cake into 1/2- to 3/4-inch slices and place one slice on each plate. Drizzle each slice with 1 tbsp juice, top with raspberries, and sprinkle with 1/2 tsp sugar. Gently stir 1 cup whipped topping into pudding and spoon mixture over raspberries. Top with remaining whipped topping. Refrigerate until served. Just before serving, garnish with fresh berries. (For red, white and blue cake, add blueberries.)

The recipe sounds delicious. I think it could easily be made into a sugar free desert. I'm going to give it a try.

I am having trouble with my email, I have tried and tried it's probably the operator.lol Hope your son does good at the track meet. Emily is in Starkville at a soccer game, gosh, these kids stay busy. I hate that I missed ya'll this past weekend. I will be in New Albany May 10 at the fairgrounds that day for a NBHA show. The show starts at 1 maybe ya'll can come and watch the race. Hope you and yours have a blessed weekend.

Good Morning Stephanie,
Sorry it's been a while since I've been by. I had some computer problems and that's why I hadn't posted or visited. I did post last Wednesday, but didn't get a chance to visit any. I put up a new post this morning and I have some pictures on there as well. The recipe for the Cran-Rasberry Cake sounds delicious. If you don't mind, please enter me in your Giveaway. It rained 3 times on Friday and then more rain is in the forecast for today. I'm hoping since May is right around the corner that the weather and temperatures will settle down and get back to normal.
